These crispy, golden potato croquettes are perfect as a snack or appetizer. They’re creamy inside with a crunchy coating.

Ingredients

3 large potatoes (boiled and mashed)

1 cup mozzarella cheese (grated)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder (optional)

1/2 teaspoon paprika (optional)

1 egg

1/2 cup all-purpose flour

1 cup breadcrumbs

Oil for frying

Instructions

  1. Prepare the Potato Mixture

In a bowl, mix the mashed potatoes with salt, black pepper, garlic powder, and paprika.

Add grated mozzarella cheese and mix well.

  1. Shape the Croquettes

Take a portion of the potato mixture and form small balls or discs.

If desired, stuff a little more cheese inside each croquette.

  1. Coat the Croquettes

Place flour in one bowl, whisk the egg in another, and pour breadcrumbs into a third bowl.

Roll each croquette in flour, dip in the egg, and then coat with breadcrumbs.

  1. Fry Until Golden

Heat oil in a pan over medium heat.

Fry the croquettes until golden brown and crispy, about 2–3 minutes per side.

Remove and drain on paper towels.

Serve hot with your favorite dipping sauce!
