Ingredients

For the Panna Cotta:

2 cups (500ml) milk

1 cup (250ml) heavy cream

½ cup (100g) sugar

2 tsp vanilla extract

2 ½ tsp (7g) gelatin powder

3 tbsp water

For the Caramelized Banana Topping:

2 ripe bananas, sliced

½ cup (100g) brown sugar

2 tbsp butter

¼ tsp cinnamon (optional)

¼ cup (60ml) water

Instructions

Making the Panna Cotta:

  1. In a small bowl, sprinkle the gelatin over 3 tbsp of water and let it sit for 5 minutes.
  2. In a saucepan, heat the milk, heavy cream, and sugar over medium heat. Stir until the sugar dissolves (do not boil).
  3. Remove from heat and add the vanilla extract. Stir in the bloomed gelatin until fully dissolved.
  4. Pour the mixture into serving glasses or ramekins. Let it cool slightly, then refrigerate for at least 4 hours or until set.

Making the Caramelized Banana Topping:

  1. In a pan over medium heat, melt the butter and add brown sugar. Stir until the sugar dissolves.
  2. Add the banana slices and cinnamon. Cook for 2–3 minutes until the bananas are soft and coated in caramel.
  3. Add the water and stir to make a sauce. Let it cool slightly.
